Spicy Baked Fish
2 pounds firm fish (I used cod fillets)
2 inch ginger, peeled, smashed and finely chopped
2 large cloves garlic, smashed and chopped
4 stalks green onion, chopped
1/2 medium red onion, finely sliced
2 tsps. kosher salt
1 tsp. fine ground hot peppers
½ tsp. ground black pepper
4 TBSPs. Olive oil
2 TBSPs. Rice vinegar
1 TBSP. Rice cooking wine
Thaw fish if using frozen and pat dry with paper towels. Place fish fillets in a single layer in baking pan lined with aluminum foil. (No need to with aluminum foil if you are using a glass or ceramic baking dish.)
Preheat oven at 400°F.
In a bowl, combine ginger, garlic, green and red onion, kosher salt, olive oil, rice vinegar and rice cooking wine. Spoon this mixture over the fish fillets.
Bake in the preheated oven at 400°F for 25 minutes.
Serve with your favorite side dish.
NOTE: Ground hot peppers are available at Asian or Thai Markets. Please start with ¼ teaspoon or less if you are not accustomed to eating spicy food.
