Yield: 18 – 21 cookies
1½ cups unbleached all-purpose flour
¾ tsp. baking soda
½ tsp. ground cinnamon
½ cup (1 stick) plus 5 TBSPs. softened butter (unsalted)
2 TBSPs. coconut oil
¾ cup firmly packed brown sugar
½ cup granulated sugar
2 extra-large eggs
3 cups old fashioned oatmeal
1 cup golden raisins
1 cup semi-sweet chocolate chips
Heat oven to 350°F.
Lightly grease 3 dark coated cookie sheets with unsalted butter.
In a mixing bowl, combine flour, baking soda, ground cinnamon and coarse kosher salt. Set aside.
With a Kitchen Aid Electric Mixer, beat butter, coconut oil and sugars on medium speed until creamy. Add eggs and vanilla extract. Beat well.
Reduce the speed to low and then add the flour mixture. Mix well. Add oatmeal and mix well. Add golden raisins and chocolate chips. Mix well.
Take a large, rounded soup spoon and drop cookie dough onto the greased cookies sheets.
Bake cookies in preheated oven for 13 to 13 ½ minutes.
Cool cookies for 1 minute in the pan and then transfer to a wire cooling rack to cool completely.
Store cookies in a tightly covered container.
